Vegetable Pancakes

Chez made these for dinner tonight - it's shredded sweet potato, beansprouts, spring onion bound with egg and fried into little pancakes. She also made a really nice dip.

They were really more of a starter than a main meal, so she then made a quick vegetable stir-fry with left over beansprouts etc. Was v. tasty!
