Lamb's Quarters
chenopodium album is an european immigrant introduced as a pot herb and is now everywhere in the u.s. it's shoots, young leaves, flowers and seeds are edible. it is cultivated in some parts of the world.
last saturday, when we were in asheville, there was a gas shortage. it took us four gas stations before we could get some gas. i got to thinking about how fragile our economy is because of our dependency on gas. since we were staying in a cabin high in the mountains, i thought about what we would do if we were stuck there without gas. then started wondering about what plants we could find and eat. i knew that stinging nettle was edible, but didn't see any other plants i knew we could eat.
the gas crisis was limited to only a few days and we have returned home, but i am still thinking about edible plants and this is why i featured lamb quarters for my blip. it is pretty yummy cooked like spinach.
