A whopping big bowl of Waldorf

When a recipe takes your fancy, isn't it great to have all the ingredients at home?

This was inspired by Russell James (thank you). I especially liked adding the watercress to this, as it's something I adore cooked but rather less so, raw. Anyway, the lettuce moderates its peppery tones quite neatly. The fresh grapes helped, too.

Into the salad went: apple, lettuce, watercress, parsley, celery, walnuts, grapes. Into the dressing went: mustard, parsley stalks, cider vinegar, olive oil, nut butter, water, salt. It's garnished with mock parmesan (grated brazils with nutritional yeast)
