Between the showers: apple pie

I love the idea of pies. In reality I am invariably disappointed by the pastry, so it is a boon to have alternatives.

Raw foodies almost always use nuts as a pie or tart base, but this can also be rich and heavy. I recently found a recipe that used sunflower seeds instead, so today I gave it a go - here is the result.

I used a combination of green and red apples which you can spot in the flecks. My sweeteners were both dates and raisins. The 'cream' is made with cashews of course, to which I added maple syrup and vanilla.
