Buttery courgette pasta
Instead of a tomato-based sauce, I fancied something simpler.
Peel your courgettes into strips, add 'butter' made from miso, olive oil, herbs, lemon juice and grated nuts. Warm a little, then sprinkle with ground pumpkin seeds and more herbs (thyme & sage). I marinated some mushrooms whilst I was waiting.
