When researchers discovered that saturated fats had a greater effect in elevating one's blood cholesterol than did dietary cholesterol, they recommended leaving off the red meats and turning to fish and chicken. Fish and chicken contain a lot less fat generally and much less saturated fat in particular.
Except when it came to this delicious dish of yellowtail with lots of butter, mashed potato, pesto and japanese mayonnaise. Sure the cholestrol was through the Harbour House roof, but at the end of a long long long day, who cares! It tasted fantastic.
