Sheep Heid
Not the boozer (haunt of Trev and Anth), but an example possibly from around 1642.
The head was served for dinner in Edinburgh University. If you look just above, and right of, centre, there are two parallel horizontal knife cuts where a diner cut some of the cheek meat away.
It is a dish that was not uncommon even in the 1930s, but would not be relished by most folk today...
One mystery I hope to solve one day is that I very seldom find goat bones in Scottish kitchen waste, yet every description of a visit to Edinburgh (eg Johnson and Boswell) mentions the speciality of roast kid served as a treat for the guests...
