Carrot Cake
I am a fan of all things carrot cake and this is the best recipe I have found. It's by Bill Granger and makes a very moist and flavourful cake which never lasts long in our cottage. I always ice it with mascarpone cheese with a little icing sugar to sweeten and the zest of an orange for a bit of zing.
200g plain flour
3 tsp baking powder
1 tsp cinnamon
200g grated carrot
250g soft brown sugar
3 eggs
250ml sunflower oil
100g sultanas
100g chopped walnuts
zest 1 orange
oven preheated to 170/GM3
Sift flour, baking powder and cinnamon and stir in carrot.
Whisk sugar and eggs and slowly whisk in oil.
Pour into the dry ingredients and mix.
Fold in the sultanas, nuts and zest.
Pour into the greased and lined tin (24cm) and bake for about an hour.
Allow to cool slightly before turning out onto a wire rack.
