SOUFFLE

Twice-baked Cheese Souffle and Melanzane alla Parmigiana for dinner ........... yum.

The souffle is an old Delia favourite, and the aubergines with Parmesan and tomato was from a Sunday newspaper Carluccio recipe booklet. I will be trying more of his recipes that's for sure!

It tasted very nice but I think the oven might have been a little too hot .... so it's lucky I blipped the ingredients instead of the finished souffles!
