Apple Sauce
My friend's apple trees gave a bountiful crop of organic unsprayed apples with their complete complement of caterpillars[usually called worms] etc. Many appeared to have a yeast bloom also.
So to make applesauce Wash the apples i also used a scotch brite sponge to remove the yeast. quarter and core the apples removing the worm holes and ugly skin areas but don't peel the apples. Since these are not worm free be suspicous of bruised areas. Since they are free and plentiful discard the bad ones. Rinse the cleaned quarters and cut into the pot chunks about 1 in. be alert to missed worms. after a suitable layer sprinkle generous cinnamon. This has 3 purposes it tastes good, it's good for you, and it hides any worms you missed. Continue layering adding cinnamon until the pot is full add a good shake of salt and a generous amount of honey I use appleblossom peach blossom honey which tastes like ...you guessed it. Cover and simmer about 30 minutes. Serve hot, cold, with ice cream or plain yogurt and get ready to make more. No one will ever notice the few worms you missed.
