May 12: Adapted lemon cake

This cake is adapted from Nigel Slaters 'The Kitchen Diaries'. Its supposed to be a lemon cake but I never have much success with it even though it does still taste good. Today I swapped the lemon for coconut and the butter for vegetable oil. Its got a great look don't you think?
