Jaggy thistlely thingy

Not sure what these flowers/blooms/plants are called (though hope some blippers are a lot more horticultural than I and can advise!) but I do like them.

I've only really seen them in bouquets and displays and not growing, unlike this one that was right there in front of me at eye level - could have been sore!
