Boxing Day Pie

What do you mean you've never heard of boxing day pie?!

A simple idea that my mother in law has always done and I love it! Him indoors made this for lunch today before his parents set off on their journey back home to Suffolk.

Boxing Day pie is simply all the left overs from Christmas day lunch, all the veg, turkey, stuffing, roast spuds etc etc chopped and mixed, fried, and then a roux type sauce made and stirred into it, this creates the pie filling that you then encase in pastry and bake.  It sounds odd but I cannot tell you how blummin gorgeous it is....with a sneaky glass of prosecco!
