Not muffins......

.....although they are in a muffin tray. Family tradition is to have potato croquettes for Christmas and we usually prep them on Christmas eve and deep fry them on the day. This year we were all going to Sligo and I decided to fry them in advance and bring them with me to reheat in the oven - much less messy provided I could get them there without breaking them. Answer - the muffin trays - and it worked.
