Left over prime rib

With a baked potato, and panko breaded fried shrimp. That's the benefit of having prime rib on New Year's Eve...the leftovers are outstanding! The prime rib is a bit of an investment, but very easy to cook, and I get more really good meals from it than just about anything there is. That makes it a bargain!
