A dab hand
Phil the Fish comes to our weekly market every Thursday. There's usually a queue at his stall and you have to get there early if you want a choice.
Sometimes he sells dabs but in this photograph he's filleting a couple of mackerel for me. He exercises the same skill and care on this budget option as he would on a much more expensive fish.
I wonder how he'd get on with preparing a fugu fish? Apparently they're to die for.
