This is my first attempt at goetta, a Cincinnati immigrant German dish. It is primarily ground pork and steel cut oats. This shows it after being cooked into loaves. A hot dry frying pan renders up the final product. I discovered it through my husband's family, and having grown up in Louisiana with boudin and head cheese fell in love with the odd dish right away. I read that of the million pounds commercially made, 99% is consumed in the Cincinnati area.

It is a breakfast that along with black coffee and over easy eggs or applesauce, makes me look forward to getting out of bed on dark winter mornings.
