Say Cheese

Very much a journal image for today.  This is my Colby cheese, all waxed and ready to spend 2 - 3 months in my cheese cave (a fridge with a thermostat that keeps it at around 10 - 13 C).  I am unsure if it was dry enough when I waxed it but will need to wait and see.
