Sous Vide
My husband (the cook in the family) has gotten very into sous vide recently. If you aren't familiar with it, sous vide is a cooking method where food is sealed and then placed in a hot water bath at a very specific temperature for a certain amount of time. This means that you can cook meats to perfect temperatures without overcooking them or drying them out.
For Dan's birthday, he got a blowtorch and a "Searzall" attachment so he can still burn a perfect sear on meat without overcooking it after it has been removed from the water bath. This was the first time I've seen it in action and I couldn't resist taking some pictures.
