Roasted Root Vegetables

Had planned to find a bird but was raining very hard so decided not to venture out too far. Thunder and lightening in January. Oh my!!

Carrots, onion, potatoes and a bit of fennel.

Tried to upload yesterday's photo (parsley was the best I could do) but blip tells me I can't do that as have already posted a photo for yesterday. Can someone PLEASE tell me what it was? (Hope it was blip worthy.)

The good news is that I bought more fresh Italian parsley today so may try again later this week...
