Pesto

To me this is one of my favourite meals. I used to have an Italian client who said to me, if you have never made your own pesto then you haven't lived. Throughout the summer I grow basil specifically for this reason, I grow MASSES of the stuff in the greenhouse in long troughs. 

At this time of year we have to buy in basil so we don't have as much pesto. It might look like a very simple meal which I suppose it is but I think the simple dishes like this are very often the best!
