Irish Cooking

When my Dublin friend and fellow cook--annieone-- posts some of her kitchen blips, I always think about sharing this book my only Irsih cookbook. I finally located it on my disorganized bookshelves this week.
I discovered that ms. Allen's recipe for making Christmas Cake is not one I have come across before. The whiskey is added to the flour before mixing everything together. She wraps it after baking and chills it in the refrigerator until ready to frost and serve. There is no bathing of the cake while it rests covered in the tin. No more whiskey, or brandy or rum is added before serving on Christmas. I have only made this cake twice and both times I think part of the success and compliments is that my cake is saturated with whiskey. It goes so well with the frostings...
This book does have other fine scone, shortbread and soda bread recipes I have enjoyed making. I may have to delve in it more for main dishes and breakfast, too.. Not sure if you know this place, Ballymaloe, in Ireland?
