Another beautiful day. Busy Monday! I promised Clare "tookie" I would post the recipe for my torte from yesterday, so here it is:
Toffee-Mocha Cream Torte
1 cup butter, softened
2 cups sugar
2 eggs
1-1/2 tsp vanilla extract
2-2/3 cups all purpose flour
¾ cup baking cocoa
2 tsp baking soda
¼ tsp salt
1 cup buttermilk
2 tsp instant coffee
1 cup boiling water
TOPPING & FILLING
½ tsp instant coffee
1 tsp hot water
2 cups heavy whipping cream
3 tbls. Light brown sugar
6 Heath candy bars crushed
Preheat oven to 350. In large bowl cream butter and sugar until fluffy, add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, cocoa, baking soda and salt in another bowl and add to creamed mixture alternately with buttermilk, beating well after each addition. Dissolve instant coffee in water and stir into batter. Pour into three greased 9” baking pans and bake for 16 – 20 minutes until done. Cool.
For topping and filling dissolve instant coffee in water in a large bowl, cool. Add whipping cream and brown sugar. Beat until stiff peaks form. Place bottom layer of cake on a serving plate and top with topping and sprinkle with crushed candy bars. Repeat layers. Store in refrigerator.
