Elk in the Pot
My culinary side showed up today and I made a different kind of meal for us. Slowed cooked elk meat with sun dried tomatoes, sweet pepper and onion relish and PEPSI. The ingredients caramelized to make a yummy broth which is good as I am not a big red meat eater. You could probably use a beef roast or pork roast for this also.
My hubby killed the elk on a hunting trip in Colorado so we have enough meat to last all year! Trying to find different ways to fix it is the real problem. But this will be on the menu again!
