Carrot Cake...........!

Yes......believe it or not my first attempt at a Carrot Cake....
I love it but hadn't made one before .......don't know why!......
Anyway this turned out very nice......at least the cake did !
The icing?.......now that's another story.........a disaster.....
I tried to be clever.....and make not just a low- fat icing but a no-fat icing and I do not joke when I tell you it didn't work!!!!
Although from this photo it doesn't look too of bad ......what landed on the top set a little and the rest just ran off down the sides.....a bit of a mess.....
So, I put the rest in a jug and told my Son (who loves carrot cake)...... That he didn't have pouring cream but pouring icing instead.........
And the good news was that it actually tasted fine.....
An extra low-fat cream cheese.....olive oil spread.....icing sugar with vanilla essence and the zest of an orange....
However, I don't think that I would have made it on Masterchef with this offering!!,!,!
As you can see we are eating it!!!
Oh and I hope all are enjoying this seasons new Masterchef 2015 which started this week.........!
