Sauce Day
It's Sauce Day here on the farm. Beginning just after daybreak in the shed, 220 kgs of Roma tomatoes became 70 liters of delicious pasta sauce by sunset. It was a family affair that included blanching, pressing and 5 hours of cooking in an 80 liter pot and then bottling.
This is my niece, supervisor of the event, with three of her four children and a friend. Dinner tonight was a delicious lamb ragu made with the sauce, over pasta and topped with fresh pecorino. It was just perfect.
