Comte Cheese & Tomato Tartelette
A very simple but delicious snack, that does not take much preparation or cooking. Line a tart tin with flakey/puff pastry, brush it with some eggwhite, add cherry tomato halves and grated cheese, and then sprinkle with some fresh thyme and drizzle with a bit of extra virgin olive oil. Choose a good strong cheese for flavour, or whatever you like really. I have tried it with a number of different cheeses, including goats cheese.
