Corn

Check out the beautiful mosaic-ed statue that welcomes travelers to Jipijapa. Interestingly enough, Jipijapa is known as the Sultan of Coffee, not corn (in years past all of the coastal coffee-growers sold their harvest to intermediary buyers in this town nestled sweetly in the subtle hills just inland of the Pacific). But the streetside corn tortilla stands, tasty corn cake sold at the markets, hillsides patterned in straight rows of tall green maiz, and this monument on the highway's main entrance to the city beg to differ.
