Start the day right.

I'm blipping early today. I'm procrastinating - avoiding the initial and most boring stage of editing Saturday night's wedding party photos - thinning out. Yawn.

Anyway, I started Monday morning off well with soft boiled eggs, piles of salt and cayenne to sprinkle in, hubby's homemade sunflower seed bread and real butter. And a fresh coffee of course. 

I love boiled eggs, but they have to be precisely cooked: runny yoke but solid white, with absolutely no gunky bits. I've tried different methods and Jamie's is my favourite: water on a rolling boil, add salt, lower eggs in with a spoon, dipping in and out a few times so they don't crack, gently place in pan and boil for exactly 6 mins. Get em out and whip the top off so they don't overcook. Enjoy immediately.
