Tomato, Asparagus and Blue Cheese Tart

Time spent in the kitchen is never time wasted, as far as I'm concerned. Healthier and cheaper meals are just a couple of the benefits. The therapeutic benefits of doing something creative, in a mindful way, come pretty high on the list too. It's important, of course, to adapt your recipe to whatever time you have available, so you're not in a rush and can enjoy the process.
Today I'm using up some tomatoes before they get over-ripe, a couple of oddments of cheese and asparagus bought while it was seasonal and inexpensive. Happiness on a plate!
