The first of many . . . !

The first rhubarb pudding on the year!  This year we have started with a pie, with a very easy sort of shortbread pastry crust, easy to make with one hand!  Mike did all the chopping of the rhubarb and the ginger.  Lots of ginger in it and a lovely custardy filling!  

Perfect for an absolutely foul day of gales and storms, icy cold and torrential rain . . . lots of reading and crosswords done!
