Z is for zucchini, or C is for courgette

This morning I spent a bit of time in the kitchen making myself a yummy lunch. I started yesterday by slicing the zucchini/courgettes and putting them on kitchen paper. Today the were transformed with the addition of heat, garlic, olive oil, chili, mint and red wine vinegar. Delish :)
