Big, gorgeous summer salad. Lightly grilled chopped chicken breast dashed with salt/ pepper and squirts of lemon juice then cooled for 10-15 minutes. While cooling put raspberries, walnuts and red onion slices on top of the lettuce bed. Before it all, (serving 2) blend a handful of raspberries with 2 tbsp of EVOO, water and red wine vinaigrette. Add 1/8 tbsp whole grain Dijon and 1/2-1 tbsp white sugar and 1/8-1/2 tbsp black pepper. Shake in small dressing server and refrigerate until the rest is ready. Guess I'm putting this one here instead of Pinterest...
