Sosaties.
A perfect evening to light a fire and sear some meat over hot coals while downing a beer and thinking one's thoughts. Sosaties are a South African dish derived from an Eastern cuisine brought to the country by slaves and exiles whom the Dutch transported from Batavia. The meat is customarily lamb but I had lots of chicken on hand. Its marinade is a mixture of vinegar, apricot jam and lots of hot curry powder. Once the meat is on the fire, I take the left-over liquid, cook it thoroughly and turn it into a sauce to accompany the meat which is served with rice to which turmeric has been added. Memories!
