Hands that do fishes

I've blipped Phil the Fish before. Today I focused on his skilful way with a knife as he filleted a mackerel for me. It took him just a few seconds.

He said that when you start off in the fish business you get given the smallest fish to practice on because they are of the least value - but being small they are very difficult to deal with.
