Flower colour
Some flowers will change colour once pollinated to signal to potential pollinators that they should go to different flowers instead. This has benefits for both the plant and the pollinator - the plant is able to maximise the flowers it gets pollinated and the pollinator avoids unrewarding flowers (nectar production will stop in the pollinated flowers).
This may or may not be what is happening here but they are lovely flowers whatever the case!
