Chocolate making

We have a local artisan chocolate maker in town.  Their shop is on main street and the chocolates are beautiful - handmade - from the bean.  The couple that own the shop started with a hobby and made it a successful business.  Here is a link to their website.  Cao

They offered a truffle making class tonight.  My daughter and I learned all about proper tempering of chocolate and what to consider when making a granache.  I have made truffles before at home so it was interesting to hear the theory to explain how mine went wrong.  :)

We were able to do some of the last steps in the chocolate making process and came home with our own handmade truffles - they are not as nice looking as these.  But they taste divine.
