Elderflower Cordial

Took the rare opportunity of some blue sky and sunshine to get out in the village lanes, armed with scissors and a carrier bag. It didn't take long to gather all the elderflowers we needed.

Everything's now steeping away - can't wait for it to be ready. The taste of Summer!

40 heads elderflower (don't rinse or you lose the pollen; you will however have bugs in it... but these will be strained out later!)
2 lemons, sliced
3 1/4 lb sugar
3oz citric acid (bought from a wine/beer-making shop)
3 pints boiling water

Mix all ingredients together in a clean bucket or bowl, cover with a tea towel and leave for up to 5 days. Strain well and bottle or freeze (I like to freeze it in a large tub - saves adding ice when you dilute it with water to serve).
