Carrot and cashew fan.......

looking pretty uninspiring but tasted so good. I had to substitute the breadcrumbs in this recipe, introduced to me by a friend, for a stuffing bought at my local whole food shop. I don't think it all stuck together quite so well without the crumbs but it certainly didn't detract from the taste! I will definitely be eating this again!
