Scabiosa stellata 'Paper Moon'

A very unusual Scabious seen at "Hinton Ampner" [National Trust] in Hampshire. The seed head shown is papery and composed of a number of seeds, each attached to what appears to be little shuttlecocks. The label alongside said 'Ping Pong' I couldn't get the connection
