Monday Night Supper

Chile Verde and a chicken and cheese quesadilla. This time of year I like to make Chile Verde which is a green chile pork stew. It is made with pork, onions, garlic, tomatillos, and lots of chiles. This one has pasillas, jalapenos, anaheim, and yellow, orange and red baby bell peppers, and also Hatch chiles that are grown in the Hatch valley in New Mexico. They are in season right now, and are delicious in this chile. It has a medium heat intensity.
