Crockpot to the rescue!!

Life has suddenly gotten busy! I find myself eating on the go with little time to cook, or at least I'm not taking the time. This is chicken coconut curry, prepped on Sunday (along with seven other meals all in the freezer) and crockpot it on Tuesday. Seemed to work well, hopefully it will get me eating at home more....
