Have you ever wondered how the holes get into the cheese ?
Ever wondered why original 'Swiss Emmentaler' is different to produced Emmentaler anywhere else in the world ?

It's an old craftmanship to get the holes in the right size at the right location. Probably the real secret of Swiss Emmentaler, besides the wonderful milk from cows eating Emmental grass (see extra photos). It is not easy to learn and even the young generation has to start learning it in the 'Saturday Emmental Cheese Hole Drilling School". Here in the blip you see the Kindergarten section and already well visible how they start with easy exercises. Upper classes are not allowed to be photographed...
