Pink cakes

Roze koeken are a Dutch treat and rather difficult to translate as they are not so much cakes as soft sometimes filled cookies. Whatever one might call them they are a nice snack with coffee or tea. These are mini versions and filled with a small amount of raspberry jam. Thinking of Fellow Blipper Trudie who likes them very much but can't get them in Houston, I'll bring them next time ;-) PS: I didn't bake them, bought them in Holland on Saturday !
