Its been a pretty run of the mill day today. Day job and running around after my daughter whilst she makes me laugh, she really is a completely wonderful fool at times. 

One of my favourites things in life is cooking for people, especially Fenner as he is so appreciative. He is rather good in the kitchen himself, he makes the best chilli, an amazing bolognese and an utterly delicious hot n sour chicken soup. 

Tonight I made us chilli roasted veg with goats cheese. The recipe is pretty darn perfect now, we have been making it for a couple of years, if you fancy trying it I have popped the details below. 

Just don't add the chilli flakes if a bit of heat isn't your thing!

Spicy roasted chilli n goats cheese (serves 2)
3 x peppers (red, yellow n green)
1 x red onion
1 x courgette
1 x garlic cloves
1 x green or red chilli pepper
One pack of goats cheese or feta
oil
salt n pepper
chilli flakes

So, cut everything up into wedges and strips. Pop the oven on 180degrees. Place everything (except the goats cheese) in a roasting dish and splash over some oil and add some salt n pepper. 

Roast for about 45 minutes. Stir occasionally. You want the onions to get a little crisp really. When everything is well roasted take out and add slices of the cheese. Pop back in the oven for 5 minutes. Take out. Eat.
