Not a very good photo of me but our dinner was delicious. I made vegetarian eggplant lasagna. I roasted one large eggplant in strips, and then layered eggplant, lactose-free cheese, spinach and arugula and then made my own tomato sauce with a can of paste, garlic, fresh basil and some spices.
