Gruyère
...is the best hard cheese in the world, full stop. (I'll never understand why the Swiss promote the Emmenthal that much, maybe because the big holes allow for more "funny" marketing ideas). The Gruyère must be really mature, like this one here from the Canton de Fribourg, called 'Alpage'. I'm absolutely delighted that i finally found a place to buy it in the UK. Go to the Borough Market in London and look for the "Käse Swiss" stall - you won't regret it!
