Potato and Leek Soup

Tonight for dinner I made a creamy potato leek soup which was very easy. First you sauté the leeks until soft, I added chopped onion and garlic as well. Then added in chopped potatoes and carrots and let simmer for 20 minutes. To make the soup creamy, I took about 1/3 of the soup and puréed it. Added some green onions and garnish at the end.
