ok, so being diagnosed with diabetes earlier this year was a real bummer but I've been ruthlessly cutting out sugar and lowering carbs wherever I can. Result has been a dramatic lowering of blood sugar levels, which I aim to sustain.
As you can imagine, xmas poses a series of gluttony challenges, and I know there will be lapses and failures alongside painful abstinence. My first attempt at low sugar, low GI mince pie making is a bit hit & miss, not helped by my insistence on popping a cherry (steady!) on top of each. Ground almond and artificial sweetener instead of icing sugar didn't quite do it for consistency, but my hybrid Bakewell Mince Pie has good flavour.... anybody got any good, simple ideas on the unsugared sweetmeat front?
