Xmas food shopping done and dusted
That snapper on the top there had my name written on it. I'm going to quick fan fry it then finish it off in the oven before serving with this Coconut, lime & lemongrass dressing:
Finely chop the white part of a stalk of lemongrass. Combine with 1/2 cup coconut milk, 1/4 cup toasted desiccated coconut, 2 tablespoons fish sauce, 2 tablespoons grated palm or brown sugar, finely grated rind of a lime and 2 tablespoons of lime juice. Pour over the fish and garnish with a few sprigs of fresh coriander leaves (cilantro).
I've made this before and can vouch it's yum. If anyone makes this over the summer, I'd love to hear if you share my enthusiasm.
However this is just one component of our Xmas lunch. We're getting together with friends in our kitchen and we'll be producing tiny dishes all afternoon long, interspersed with Scrabble, etc.
We set off to the market at 7:15am with our shopping lists and my extra shots today are also from there. There will be nothing too traditional about our Xmas but we will be having a good time with an array of dishes that we'll all make together - should be a fun and delicious time.
I love the intensity in the ladies at the counter in my last extra - buying seafood for Xmas is serious business!
